COOKING CLASSES AT MANGO BAY RESORT FIJI
Once a week the very popular Mango cooking classes take place under the shade of the palm trees at the Mango Bay Resort on Fiji's Coral Coast. These interactive classes demonstrate how to prepare and make typical Fijian dishes such as the refreshing dish of kokoda (pronounced kokonda) & the sweet dessert of coconut ice.
This week's special was kokoda which uses the fresh local ingredients of coconut, limes, chilli & fish. Preparation involves scraping the fresh coconut flesh, preparing the fish and squeezing the lime juice, then marinating the fish in the lime juice, chilli and coconut milk.
